Sweet & Spicy Lemon Shrimp
I made this recipe up tonight! Full disclosure... I do NOT like seafood, but my husband does. He bought a bag of frozen shrimp & asked me to make it with our steak dinner tonight (It's his Birthday!). I decided to mix sweet and spicy, so here is what I did.
I lined the frozen shrimp on parchment paper on a jelly roll pan (a cookie sheet with sides). Be sure to get off as much ice from the cookie sheet as possible. You don't want too much extra moisture.
Then I melted 1 stick of butter, added the garlic, brown sugar, dried parsley (use fresh if you have it... I didn't have any), and some lemon juice. I used a silicone brush to slather each shrimp generously. Be sure to leave a little butter for when you flip them! Frozen jumbo shrimp (cooked, shelled & de-veined) Melt together & brush on shrimp: 1 stick of salted butter 2 garlic cloves (pressed or minced) 1 T brown sugar 1 tsp dried parsley 1 tsp red pepper flakes (use more or less) 1/2 fresh lemon juiced Cook the shrimp at 450 degree oven for about 8 min per side. Flip, add more sweet & spicy butter. I then put oven to Broil for a few minutes. Don't burn!
My hubby said they were a little too spicy, so I thought to make a sweet drizzle for the top. Melt together the butter, honey & dried parsley. Then use a spoon to literally drizzle over each shrimp. I also squeezed a little more fresh lemon juice on top.
Finishing drizzle: 1 T butter 1 T honey 1/2 tsp dried parsley. You can serve these at room temperature! Hopefully you love them as much as my husband did!
