Loaded Smashed Red Potatoes
My family LOVES any kind of potato - but oh man, are these so GOOD! You can really add whatever you want - maybe cooked bacon or herbs. You can even dump in fried onions, you know, like the green bean casserole topping kind! That is what I love about cooking, is you can take a method & make your own creations!
First, wash your taters - I used about 6 fairly large ones (I was only feeding 2-4 people). Cut them into quarters and plop (a very technical term...) them into a pot of water. Boil until fork tender, for about 20 minutes or so.
Now here is the hard part (just kidding...) Dump everything in and SMASH with a potato masher. Add more milk as needed, but let me tell you what I dumped in this glorious pan.
I leave the skin on the potatoes, but you can peel them if you would like. I do not have the time, patience or care to peel them - but that is up to you!

4 tablespoons of butter
2 green onions (I just used scissors and cut them right in the pan!)
1 teaspoon of seasoned salt
1/2 teaspoon of pepper
1/2 cup of shredded cheddar cheese
1/2 cup of sour cream (you can use light sour cream)
1/4 cup of milk (start with this, then add more as needed after you mash)
Now... mash it all up! Add more milk if needed. It should look like this.

Make sure you give them a taste at this point and add more seasonings if needed! I hope you enjoy!
