Baked Potato Salad

Raise your hand if you love potatoes, cheese and sour cream in ANY form?! I made this recipe up and it turned out delicious!! 

Ingredients

Yukon Gold Potatoes (about 10) with skin on

8 oz. Sour Cream

4 oz. Light Real Mayo (not salad dressing) 

1 tsp Worcestershire Sauce (trust me on this)

1 tsp Seasoned Salt

1 tsp Garlic powder

1/2 tsp Pepper 

1/2 cup cheddar cheese 

Directions

1) Cut potatoes into 1/2 inch cubes. Boil potatoes for about 10 minutes until mostly cooked. Use a fork to test. Should not fall apart. 

2) In a large mixing bowl, make the dressing: sour cream, Mayo, seasonings & cheese. Stir well to mix everything together. (Taste for seasoning).


3) When potatoes are fork tender, drain water and immediately dump them into the bowl with the dressing. Stir with a rubber scraper. Incorporate well, careful not to smash the potatoes.  

4) Dump mixture into a square bakin dish. Top with a little more cheese and bake until cheese is melted and heated through, about 15 minutes. 

Serve immediately!! Enjoy!!
